Pomegranate Smoothie and Quinoa Black Bean Burger

Wednesday we had a snow day as a bunch of snow dumped on Columbus overnight on Tuesday. It was a wonderful treat in the middle of the week and to celebrate I made a big smoothie for breakfast. I’d been waiting a while to make this specific smoothie after I saw the recipe on iowagirleats.com

Into the blender went 1 6oz container of Chobani pomegranate yogurt, a banana, blueberries and vanilla almond milk. I had hyped up this smoothie a lot in my head and it was good, but not as unique as I was expecting. I think sometimes the smoothie is just so cold it’s hard for me to discern strong flavors one way or another. Does anyone else feel that way?

Another new recipe I tried this week was Quinoa Black Bean Burgers. I’ve had a few variations of black bean burgers pinned on Pinterest for the past few months, but the craving set in this evening so I whipped up a batch for dinner. I opted to bake them in the oven vs. pan frying to save a little extra calories on the saved olive oil. I also didn’t have cilantro on hand to use for the dip, but overall it was a really flavorful recipe!
